There is an organization called the National Fire Protection Association that have created guidelines and codes for hood cleaning.  Local governments adopt these standards and codes and look to the professional hood cleaning companies to train their technicians to their guidelines.  They put these codes in place to prevent injury, fire, electrical and other related hazards.  These guidelines and codes are in place to prevent property damage, injury or even possible death that can happen when someone is not trained properly.

What are the NFPA Code 96 Recommendations on how Often Hood Cleaning Should be Performed?

The following are the guidelines on how often a professional hood cleaning should be done on a commercial kitchen exhaust system:

  • Monthly when using solid fuels.  Solid fuels include coal, wood, charcoal and wood pellets.
  • Quarterly for kitchens that do a lot of charbroiling, wok cooking and/or are open twenty-four hours a day.
  • Semi-annual if the kitchen is used moderately. 
  • Annually if the kitchen is only used occasionally.  These are typically day camps, senior centers and churches.
